  • 6 tbsp shredded coconut (1 tbsp per jar)

For Toppings:

  • 2 ripe mangoes, diced (about ⅓ mango per jar)
  • 6 tbsp toasted coconut flakes (1 tbsp per jar)
  • 6 tbsp pumpkin seeds (1 tbsp per jar, optional)

For Layering in the Mason Jars:

Bottom Layer (Wet Ingredients & Oats):

  • Divide the oat base mixture evenly among the jars.

Second Layer (Fruit & Sweetness):

  • Add ⅙ of the diced mango per jar.

Top Layer (Crunchy Toppings - Add Before Serving):

  • Toasted coconut flakes and pumpkin seeds for extra crunch.

Instructions:

  1. Prepare the Oat Base:

    • In a large mixing bowl, whisk together rolled oats, coconut milk, chia seeds, maple syrup, vanilla extract, and shredded coconut.
    • Let sit for 5 minutes to allow the chia seeds to begin absorbing the liquid.
  2. Assemble the Mason Jars:

    • Bottom Layer: Pour the oat base mixture evenly into the jars.
    • Second Layer: Add diced mango on top.
    • Top Layer: Store toasted coconut flakes and pumpkin seeds separately, adding before serving for the best texture.

Storage & Serving:
